SOUTHWEST VEGGIE BURGERS

Here’s a fantastic, healthy recipe to start your weekend off on the right foot.

INGREDIENTS
• 1 cup cooked brown rice
• 1 cup cooked black beans, rinsed and drained (I used canned & didn’t cook 1st)
• 1/4 cup fresh diced tomatoes
• 1/4 cup diced roasted red bell peppers (roasted mine using oven broiler)
• 1/4 cup shredded carrots
• 1 cup cooked and mashed sweet potato
• 1/4 cup chopped cilantro (I used the spice since I didn’t have fresh)
• 1 tablespoon chili powder
• 1 teaspoon ground cumin
• 3 green onions, finely chopped
• 2 cloves garlic, minced
• 1 teaspoon of hot sauce of your choice (I used Sriracha)

DIRECTIONS
• Preheat oven to 400°
• Line a cookie sheet with parchment paper
• Combine all ingredients in a large bowl and stir to mix
• Form the mixture into 4 patties
• Place patties on the baking sheet and bake, turning once half way through cooking, until browned and slightly crisp on the outside, about 30 minutes.
• Topped with freshly diced tomatoes, diced white & red onions, and parsley!

** Now remember, these aren’t juicy like a hamburger. They’re pretty dry! So, I took some plain Greek yogurt & mixed it with salsa & topped my patty with it. (I also skipped the bun!!)
