Homemade Fortune Cookies


• 3 egg whites
• 3/4 cup sugar
• 1/2 cup butter, melted and cooled
• 1/4 tsp vanilla extract
• 1/4 tsp almond extract
• 1 cup all purpose flour
• 3 tbsp water

• Preheat your oven to 375°
• Line a cookie sheet with parchment paper
• Write out your fortunes on small strips of paper and have them ready to go (the kids love reading their fortunes!)
• Using a mixer, whip the egg whites and sugar on high speed for about 2 minutes and then decrease the speed to low
• Add the melted butter, vanilla, almond extract, water, and flour ONE AT A TIME (making sure each ingredient is absorbed before adding the next)
• Spoon the batter onto the parchment paper and spread it out into an even circle (about 3″)
• Since these set very quickly only do two at a time
• Bake for about 7-8 minutes, until the edges are slightly brown (too much browning will cause them to snap when you shape them & if they don’t brown enough they will tear)
• Once your fortune cookies are done baking, remove them from the oven and quickly scoop the circle off, and fold your fortune cookie in half, into a semicircle. This is when you place your fortune strip into the cookie (quickly).
• Place your semicircle onto the edge of a cup (press gently) and quickly fold the ends down, to shape into a fortune cookie
• Hold the cookie down to let it set
• To help hold its shape place it in a cupcake pan while cooling
** The cookies will be very hot when they come out of the oven. Use gloves or a thin towel when handling
