Chicken Spring Roll & Peanut Dipping Sauce


• mango (julienned)
• cucumber (scooped seeds out 1st & julienned)
• carrots (julienned)
• Cooked chicken breasts (cut into small cubes)
• Handful of Spring Salad Mix
• Rice Paper

• Roll all the ingredients into a Rice paper
* The trick is to submerge your rice paper into hot water for about three seconds and quickly stack your ingredients and roll. (I got better with each one!!)

For the peanut dipping sauce:
• 2 tbsp peanut butter
• 1 tbsp soy sauce
• 1 tbsp rice vinegar
• 1 tsp honey
• 1 tsp sesame oil
• 1 tsp sriracha
• chopped peanuts (optional, of course)

I absolutely LOVE this easy, light meal!!  You can always omit the meat if you’re a vegetarian OR just in the mood for fruits & veggies!
