Baked Eggs in Tomatoes & Home Fries

Saturday Brunch: Baked Eggs in Tomatoes, served with homemade home fries!

INGREDIENTS
• 4 large tomatoes
• Salt & Pepper
• 1/2 cup fresh or frozen corn kernels
• 4 large eggs
• Green onions

DIRECTIONS:
• Preheat oven to 350°
• Line a baking dish with parchment paper
• Cut off the top of each tomato
• Hollow out your tomatoes
• Place tomatoes in your baking dish and season with salt and pepper
• Divide corn among tomatoes
• Whisk together eggs and green onions in a bowl
• Season with salt and pepper
• Divide your egg mixture between the tomatoes
• Bake until egg mixture is set, 45-50 minutes
* Add cheese if you’re feeling crazy!

For Potatoes:
• 4-5 Potatoes
• Cut your potatoes into square cubes
• Season with salt, pepper, garlic powder, pinch of onion salt, and parsley (or whatever floats your boat)
• Throw in a pan with some butter or olive oil & cook until potatoes are soft
