Mediterranean Chicken

Good Morning!  I wanted to share a new recipe today…

Ingredients:
• Four chicken breasts (as usual I cut the breasts as if to butterfly but cut all the way through making 8 breasts instead)
• Flour, salt & pepper to dredge the chicken with
• 6-7 plum tomatoes-chopped
• 1 small red onion-chopped
• Salt & Pepper
• 1 clove garlic
• 1 tbsp balsamic vinegar
• 1 tbsp olive oil
• Crumbled feta cheese
• Black olives-sliced
• Parsley (fresh is best but I grabbed mine off the spice rack)
• Pinch of garlic powder
• Fresh spinach OR greens of your choice (arugula works good, too)

Directions:
• Make the tomato mixture and season with salt & pepper (I’d add the cheese at the end, so it doesn’t get all soggy from the tomatoes)
• Coat your chicken breasts in flour, pinch of garlic powder, salt & pepper
• Sauté in olive oil for a few minutes on each side (turn once)-
• Spread out your spinach (or whatever mixed greens you prefer) on a plate
• Drizzle with balsamic vinegar
• Lay the cooked chicken breasts over the spinach salad
• Spoon on the tomato mixture and serve!
