• Ground beef OR meat of your choice (I used ground sirloin today)
• Tortillas
• Shredded cheddar cheese
• Toppings of your choice (lettuce, tomatoes, salsa, black olives, sour cream, green onions…you get the idea)
• Taco seasoning-I always make my own taco seasoning (here’s the ingredient list for it):
• 1 1/2 tsp. kosher salt
• 1 1/2 tsp. ground cumin
• 1/2 tsp. ground black pepper
• 1/2 tsp. paprika
• 1/2 tsp. garlic powder
• 1/2 tsp. onion powder
• 1/4 tsp. chili powder
• 1/4 tsp. dried oregano
• Dash of crushed red pepper
• 1/8 tsp. ground ginger

• Preheat your oven to 350°
• Cook your burger (this is when you throw in your taco seasoning)
• You’ll want to cut your tortillas into circles (about 4″ in diameter)-I used a round cookie cutter to do this (pressed and twisted, making perfect little circles). You’ll get three circles per one tortilla. (Save your scraps to make chips)
• Take 3-4 of your tortilla circles & wrap in a wet paper towel, microwave for about 25 seconds to soften
• Lightly grease a cupcake pan (use some PAM spray)
• Take your softened tortilla circles & mold them into the cupcake tin
• Add a layer of shredded cheese in the bottom of each cup
• Place in the oven and cook for ten minutes
• Remove from oven & then add your cooked meat, top with more cheese
• Return to oven & cook for an additional ten minutes
• Remove from oven
• Add on your favorite toppings & serve
