Easy Meatloaf Recipe

We are not big red meat eaters but every once in awhile you just want your burger, right? This is a fantastic recipe that I originally found looking amongst the million meatloaf recipes on the internet. I tweaked to my liking and came up with the perfect meatloaf. My family loves it and I hope you do, too!

For the Meatloaf
• 1 1/2 lbs ground beef
• 1 small vidalia onion-finely chopped
• 1 large egg
• 1 cup milk
• 1 cup crushed RITZ crackers
• 1 tsp salt
• 1 TBS Worcestershire sauce
• 1/4 tsp pepper
• 1/2 TBS garlic powder
• I also threw in a squirt of ketchup
• In addition to the crushed crackers I also used seasoned bread crumbs because the mixture was not firm enough (It also adds more flavor).

For the sauce
• 1/2 cup ketchup
• 2 TBSP dark brown sugar

Preheat oven to 350°
• Combine all the meatloaf ingredients together in a large bowl
• Here is where you will decided if you need to add bread crumbs-add a little at a time until the mixture is firm enough to form into a loaf (you could also skip the bread crumbs and just use more crushed up crackers-whatever you prefer)
• Place in a lightly greased 9×13 inch baking dish
For the sauce:
• In a separate small bowl, combine the brown sugar and ketchup
• Mix well and pour over the meatloaf
• You will have some sauce left over. I put the remaining sauce in separate condiment dishes and served alongside the meatloaf for dipping.
• Bake for about 1 hour OR until meat is throughly cooked
• Make sure you allow the meatloaf to cool before you cut to serve (this is really important! You ALWAYS want meats to sit for a bit before you cut into them, as the juice is redistributed throughout the meat, leaving you with a juicy & flavorful piece of protein). 🙂
• Serve with potatoes and a veggie
