Smoky Yogurt Chicken Skewers with Fruit Chutney


This is one of my favorite recipes. I know yogurt seems like a strange marinade, but it really tenderizes the chicken and gives it so much flavor! Give it a try. Let me know what you think!!

For the chicken:
2 lbs boneless, skinless chicken breast
1 cup Greek yogurt
2 TBS tomato paste
1 tsp ground cumin
1/2 tsp salt
1 TBS lime juice
1/2 tsp ginger

For the chutney:
2 cups chopped (stone) fruit (I used peaches, plums, and mangos)
*stone fruits cooks better!
1 TBS fresh lime juice
1/4 cup sugar
1 TBS white wine vinegar
1/2 tsp cinnamon
1/4 tsp clove
1/4 tsp nutmeg

In a big bowl, whisk to combine the yogurt, tomato paste, cumin, salt, lime juice, & ginger. Cut the chicken breasts into cubes and toss them in the yogurt mixture. Cover the bowl with plastic wrap and let the chicken marinate overnight (@ least eight hours) Don’t skip this step (the longer it marinates the more flavorful & tender the chicken gets).
Put the chicken onto skewers, and heat the grill to high.
Grill for about 3 minutes on each side.

For the chutney, place all the chutney ingredients in a saute pan-set over medium high heat, and cook, stir frequently (for about 10 minutes). The fruit will soften and the juice will reduce down and thicken. Serve alongside the smoky yogurt chicken.
